Instructions

  1. In a large pot, combine the chicken, chicken broth, water, onion, carrots, celery, salt, pepper, and thyme. Bring to a boil.
  2. Reduce heat and simmer for about 1 hour, or until the chicken is cooked through.
  3. Remove the chicken from the pot and let it cool. Shred the chicken into bite-sized pieces, discarding the bones and skin.
  4. In a bowl, mix together the flour, baking powder, and salt for the dumplings.
  5. Add the melted butter and milk to the dry ingredients, stirring until just combined.
  6. Drop spoonfuls of the dumpling batter into the simmering broth.
  7. Cover the pot and cook for 15-20 minutes, or until the dumplings are fluffy and cooked through.
  8. Add the shredded chicken back into the pot and stir gently to combine.
