A comforting sandwich featuring perfectly seasoned chicken, creamy avocado, and gooey cheese, all grilled to golden perfection.

- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Season chicken breasts generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked.
- Let the chicken rest, then slice thinly.
- Slice the avocado, red onion, and tomato. Prepare cheese slices.
- Spread mayonnaise on one side and Dijon mustard on the other of the bread slices.
- Layer chicken, avocado, cheese, onion, and tomato on two slices of bread. Top with remaining slices, mayo side down.
- Heat skillet or grill pan over medium heat. Add butter or olive oil.
- Grill sandwiches 3–4 minutes per side until golden brown and cheese is melted.
- Remove from heat, let cool briefly, slice in half, and serve warm.
Notes
For variation, try using grilled or rotisserie chicken. Customize with different cheeses or add jalapeños for heat.
