Description

A comforting sandwich featuring perfectly seasoned chicken, creamy avocado, and gooey cheese, all grilled to golden perfection.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season chicken breasts generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6–7 minutes per side until fully cooked.
  3. Let the chicken rest, then slice thinly.
  4. Slice the avocado, red onion, and tomato. Prepare cheese slices.
  5. Spread mayonnaise on one side and Dijon mustard on the other of the bread slices.
  6. Layer chicken, avocado, cheese, onion, and tomato on two slices of bread. Top with remaining slices, mayo side down.
  7. Heat skillet or grill pan over medium heat. Add butter or olive oil.
  8. Grill sandwiches 3–4 minutes per side until golden brown and cheese is melted.
  9. Remove from heat, let cool briefly, slice in half, and serve warm.

Notes

For variation, try using grilled or rotisserie chicken. Customize with different cheeses or add jalapeños for heat.
