Ingredients

  • 1 cup cooked chicken, diced
  • 1 cup mixed fresh vegetables (bell peppers, cucumbers, carrots)
  • 1/4 cup peanuts, chopped
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Start by placing the cooked rice, diced chicken, and mixed vegetables in a large bowl.
  2. In a separate bowl, add the peanut butter, soy sauce, lime juice, honey, sesame oil, salt, and pepper. Whisk until smooth.
  3. Pour the peanut dressing over the salad and toss gently until combined.
  4. Finish with chopped peanuts on top before serving.
