Description

Delicious Chicken Fajita Pasta combines tender chicken, vibrant bell peppers, and a creamy sauce, offering comfort and flavor in every bite.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 envelope (3 tablespoons) taco or fajita seasoning
  • 2 cups diced onion
  • 2 cups diced bell peppers
  • 34 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
  • 8 oz (about 3 cups) penne pasta
  • 1/2 teaspoon salt

Instructions

  1. Begin by cutting the chicken breasts into bite-sized pieces. In a bowl, season the chicken with half of the taco seasoning.
  2. Heat 1 tablespoon of olive oil in a large skillet over high heat. Add the chicken in a single layer and sear without stirring for 1-2 minutes until golden brown.
  3. Flip the chicken pieces to brown on the other side, then transfer them to a plate and set aside.
  4. Add the remaining tablespoon of olive oil to the skillet, then toss in the diced onions and bell peppers with the rest of the taco seasoning.
  5. Sauté the vegetables for 5-7 minutes until they develop a slight char.
  6. Lower the heat and stir in the minced garlic, cooking until fragrant.
  7. Remove the sautéed veggies and set aside with the chicken.
  8. Pour in the chicken broth, heavy cream, Ro-Tel tomatoes, uncooked penne pasta, and salt into the skillet.
  9. Stir well to combine and bring to a boil.
  10. Cover the skillet, reduce the heat to medium-low, and let it cook for about 15 minutes.
  11. Once the pasta is cooked, reintroduce the chicken and vegetables to the skillet.
  12. Serve your Chicken Fajita Pasta with your choice of sides.
