- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts
- 1 envelope (3 tablespoons) taco or fajita seasoning
- 2 cups diced onion
- 2 cups diced bell peppers
- 3–4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
- 8 oz (about 3 cups) penne pasta
- 1/2 teaspoon salt
Instructions
- Begin by cutting the chicken breasts into bite-sized pieces. In a bowl, season the chicken with half of the taco seasoning.
- Heat 1 tablespoon of olive oil in a large skillet over high heat. Add the chicken in a single layer and sear without stirring for 1-2 minutes until golden brown.
- Flip the chicken pieces to brown on the other side, then transfer them to a plate and set aside.
- Add the remaining tablespoon of olive oil to the skillet, then toss in the diced onions and bell peppers with the rest of the taco seasoning.
- Sauté the vegetables for 5-7 minutes until they develop a slight char.
- Lower the heat and stir in the minced garlic, cooking until fragrant.
- Remove the sautéed veggies and set aside with the chicken.
- Pour in the chicken broth, heavy cream, Ro-Tel tomatoes, uncooked penne pasta, and salt into the skillet.
- Stir well to combine and bring to a boil.
- Cover the skillet, reduce the heat to medium-low, and let it cook for about 15 minutes.
- Once the pasta is cooked, reintroduce the chicken and vegetables to the skillet.
- Serve your Chicken Fajita Pasta with your choice of sides.
