Description

A vibrant, zesty Chicken Piccata dish with a golden crust and creamy lemon-caper sauce.


Ingredients

  • 1 cup Flour
  • 1 cup Breadcrumbs
  • 2 tablespoons Capers
  • 1/4 cup Lemon Juice and Zest
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • Fresh Parsley for garnish

Instructions

  1. Prep the chicken: Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1 inch.
  2. Season the flour: In a shallow dish, combine flour, salt, and pepper. Dredge each chicken piece in this mixture.
  3. Sear the chicken: Heat olive oil and butter in a skillet over medium-high heat, add chicken, and sear for 4-5 minutes on each side until golden brown.
  4. Make the sauce: In the same skillet, add capers and sauté for 30 seconds. Pour in lemon juice and scrape the brown bits.
  5. Finish cooking the chicken: Return chicken to the skillet, let it simmer in the sauce for 2 minutes, and sprinkle with parsley.
  6. Serve: Plate over pasta and drizzle with the lemon-caper sauce, garnish with lemon slices.

Notes

Make-ahead chicken can be stored in the refrigerator for up to 24 hours before cooking. For a healthier version, try air frying or baking.
