Ingredients

  • 2 Chicken Breasts
  • 200g Pasta (Fettuccine or Penne)
  • 1 cup Cream
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • Fresh Herbs (Parsley, Basil, or Thyme)
  • Salt and Pepper to taste
  • 1 Tbsp Olive Oil
  • Optional Vegetables (Spinach, Bell Peppers, Zucchini)

Instructions

  1. Cook the Pasta: Bring water to a boil, add salt, then cook pasta until al dente. Reserve a cup of pasta water and drain the rest.
  2. Sear the Chicken: Heat olive oil in a skillet, season chicken with salt and pepper, then sear until golden brown, about 5-7 minutes per side. Remove and let rest.
  3. Prepare the Sauce: In the same skillet, add garlic and onions, sautéing until fragrant. Pour in cream and stir, adding reserved pasta water to adjust consistency.
  4. Combine and Serve: Slice chicken, return to skillet with cooked pasta and vegetables, tossing to coat in sauce. Garnish with fresh herbs.

Notes

For a lighter option, substitute cream with Greek yogurt or a dairy-free alternative. Customize with seasonal vegetables or alternative proteins like tofu.
