- 1 pound boneless, skinless chicken breasts or tenders, cut into strips
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1/4 cup white wine or chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
- 1 cup long grain white rice
- 2 1/4 cups chicken broth
- 2 tablespoons unsalted butter for rice

Instructions
- Sauté the chicken: In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Season your chicken strips with salt, pepper, and Italian seasoning. Sauté them for about 6–8 minutes until they turn golden brown and are cooked through. Remove them from the skillet and set aside.
- Create the garlic base: In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant but not burned.
- Deglaze the pan: Pour in white wine or chicken broth and stir to deglaze the pan, capturing browned bits. Add lemon juice and simmer for 2–3 minutes.
- Combine chicken and sauce: Return cooked chicken to the pan, tossing to coat with sauce. Sprinkle chopped parsley and heat through.
- Prepare the garlic Parmesan rice: In a saucepan, melt 2 tablespoons of butter and add 2 minced garlic cloves. Sauté for about 1 minute. Add rice and toast for 2 minutes while stirring.
- Cook the rice: Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 18–20 minutes until rice is fluffy.
- Finish the rice: Stir in grated Parmesan cheese, ensuring it melts. Season with salt and pepper to taste.
- Serve: Spoon chicken scampi over garlic Parmesan rice and enjoy!
Notes
For added flavor, marinate chicken in lemon juice, olive oil, garlic, and Italian seasoning overnight. Customize with vegetables like zucchini or bell peppers.
