- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup diced onion
- 1/2 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a mixing bowl, combine olive oil, lime juice, and all the spices. Whisk until well mixed.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Let marinate for at least 15 minutes.
- Heat a cast iron skillet or grill over medium-high heat. Cook the chicken for 6-7 minutes per side until fully cooked and charred.
- Allow chicken to rest for a few minutes, then chop into bite-sized pieces.
- Warm tortillas on the skillet or over the flame until pliable. Fill each tortilla with chicken, diced onion, chopped cilantro, and a squeeze of lime.
