- 4 large russet potatoes
- 2 cups chili (homemade or canned)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then poke holes in them with a fork.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender.
- While the potatoes are baking, heat the chili in a saucepan over medium heat.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut a slit in the top of each potato and gently squeeze the sides to open them up.
- Fill each potato with a generous amount of chili.
- Top with shredded cheddar cheese, sour cream, and chopped green onions.
- Serve immediately and enjoy!
