Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 cup pineapple, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Olive oil for grilling

Instructions

  1. Season diced chicken with chili powder, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook seasoned chicken for 7-10 minutes until fully cooked.
  3. In a bowl, combine diced pineapple, red onion, cilantro, lime juice, and a pinch of salt.
  4. Grill the tortillas for about 30 seconds on each side until warm and slightly charred.
  5. Assemble the tacos with cooked chicken and top with grilled pineapple salsa.
  6. Serve immediately.
