Description

Tender chicken thighs marinated in a smoky chipotle and honey blend, served with creamy mashed potatoes infused with smoked gouda.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine chipotle sauce, honey, garlic powder, smoked paprika, salt, and pepper. Mix until well blended.
  3. Coat the chicken thighs with the marinade, ensuring even coverage. Place in a baking dish, skin side up.
  4. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  5. Meanwhile, boil the potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and return to pot.
  6. Add milk, smoked gouda, and butter to potatoes, and mash until creamy.
  7. Serve chicken with a scoop of smoked gouda mashed potatoes.

Notes

For deeper flavors, marinate chicken thighs ahead of time. Customize with additional vegetables if desired.
