- 4 chicken thighs
- 2 tablespoons chipotle in adobo sauce
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 ounces smoked gouda cheese, shredded
- 2 tablespoons butter
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine chipotle sauce, honey, garlic powder, smoked paprika, salt, and pepper. Mix until well blended.
- Coat the chicken thighs with the marinade, ensuring even coverage. Place in a baking dish, skin side up.
- Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
- Meanwhile, boil the potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and return to pot.
- Add milk, smoked gouda, and butter to potatoes, and mash until creamy.
- Serve chicken with a scoop of smoked gouda mashed potatoes.
Notes
For deeper flavors, marinate chicken thighs ahead of time. Customize with additional vegetables if desired.
