Description

Ingredients

  • Juicy Marinated Steak (flank or skirt steak)
  • 1 cup long-grain white or brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn
  • 1 ripe avocado, sliced
  • Cilantro Lime Sauce (sour cream, lime juice, minced cilantro, olive oil)

Instructions

  1. Marinate the steak with lime juice, olive oil, cilantro, chili powder, cumin, salt, and pepper for at least 30 minutes.
  2. Cook the steak on medium-high heat for 4-5 minutes per side for medium-rare.
  3. Prepare the rice according to package instructions and mix in lime juice and chopped cilantro.
  4. Heat black beans and corn in a small saucepan until warmed through.
