Description

Warm, fluffy muffins filled with the delightful aroma of cinnamon and sugar, reminiscent of classic French toast.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 1 cup milk
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)
  • Whipped cream, powdered sugar, fresh berries, maple syrup, chopped nuts (optional for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners.
  3. Whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon in a medium bowl.
  4. Whisk together the melted butter, milk, eggs, ground nutmeg, and vanilla extract in a large bowl until smooth.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Evenly divide the batter among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack.
  9. Mix together the granulated sugar and ground cinnamon in a shallow dish.
  10. Dip the tops of the warm muffins into the cinnamon sugar mixture.
  11. Return to the oven for an additional 2-3 minutes.

Notes

You can prepare the batter the night before and store it in the refrigerator. For an air fryer alternative, bake at 350°F (175°C).
