- 2 cups roasted red peppers
- 1/2 cup vegetable broth
- 2 cloves garlic, minced

- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- In a blender, combine roasted red peppers, vegetable broth, garlic, paprika, salt, and pepper. Blend until smooth.
- In a skillet, heat olive oil over medium heat. Add the cod fillets and sear for 2-3 minutes on each side until golden brown.
- Pour the roasted red pepper sauce over the cod fillets in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
