Description

Ingredients

  • 2 cups heavy cream
  • 1 cup brewed espresso
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons gelatin
  • 1/4 cup cold water
  • 8 oz dark chocolate, chopped
  • 1/4 cup butter

Instructions

  1. Whip the cream: In a large bowl, use an electric mixer to whip the heavy cream until soft peaks form.
  2. Prepare the gelatin mixture: In a separate bowl, dissolve the gelatin in cold water and mix with hot espresso and sugar until combined.
  3. Combine ingredients: Add vanilla extract to the warm espresso mixture and gently fold it into the whipped cream.
  4. Chill the mousse: Pour into serving dishes and chill in the refrigerator for at least 2 hours.
  5. Make the ganache: In a double boiler or microwave, melt the chopped dark chocolate and butter until smooth.
  6. Finish with ganache: Cool the ganache slightly and pour over the chilled mousse.
  7. Final chill: Return to the fridge for an additional 30 minutes before serving.
