Description

Cookies and Cream Icebox Cake is a no-bake dessert that combines layers of creamy filling and chocolate cookies for a delightful treat.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 chocolate sandwich cookies
  • 1 cup crushed cookies for topping

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form.
  2. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  3. In a 9×13 inch dish, layer half of the chocolate cookies at the bottom.
  4. Spread half of the whipped cream mixture over the cookies.
  5. Repeat the layers with the remaining cookies and whipped cream.
  6. Top with crushed cookies.
  7. Cover and refrigerate for at least 4 hours or overnight.
  8. Slice and serve chilled.

Notes

  • For a richer flavor, use chocolate ganache between layers.
  • Can be made a day in advance for better flavor.
  • Store leftovers in the refrigerator for up to 3 days.
