Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese and eggs, and mix until smooth.
- Add the almond flour, coconut flour, baking powder, and salt to the mixture, and stir until well combined.
- Gently fold in the fresh blueberries.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
- Bake for 20-25 minutes or until the tops are golden brown.
