Description

Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt and black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water until al dente, according to package instructions. Drain and set aside.
  2. Season the steak on both sides with salt, black pepper, garlic powder, and smoked paprika.
  3. Sear the steak in a hot skillet over medium-high heat with olive oil for about 4-6 minutes per side. Let it rest, then slice it against the grain.
  4. Prepare the sauce in the same skillet by melting the butter and sautéing the minced garlic until fragrant.
  5. Combine the heavy cream and milk, whisking continuously to integrate.
  6. Add the parmesan cheese until melted and the sauce is creamy. Adjust seasoning.
  7. Mix in the cooked tortellini until well coated.
  8. Top with the sliced steak and garnish with parsley and red pepper flakes if desired.

Notes

For a vegetarian option, substitute steak with plant-based alternatives and use cheese tortellini.
