Ingredients

  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 package refrigerated pie crusts
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, combine cranberries, sugar, lemon juice, and cornstarch. Cook over medium heat until the cranberries burst and the mixture thickens.
  3. Roll out the pie crusts and cut them into circles.
  4. Place a spoonful of the cranberry filling on one half of each circle.
  5. Fold the dough over to create a pocket and seal the edges with a fork.
  6. Mix the egg and milk to create an egg wash, and brush it over the tops of the hand pies.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown.
