- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup fresh cranberries, chopped
- 1 cup orange juice
- 2 teaspoons baking powder

- ½ teaspoon salt
- 1 tablespoon orange zest
Instructions
- Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the orange juice and zest.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped cranberries.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- For the Citrus Buttercream, beat together 1 cup of softened butter, 4 cups of powdered sugar, 2 tablespoons of orange juice, and 1 teaspoon of orange zest until smooth and creamy.
- Once the cakes are cool, frost the top of one layer, add the second layer, and frost again. Repeat with the third layer and frost the sides of the cake.
- Decorate with additional cranberries and orange slices if desired.
Notes
- Ensure the butter is at room temperature for easier mixing.
- For a more intense orange flavor, add more orange zest to the buttercream.
- This cake can be made a day in advance and stored in the refrigerator.
