Ingredients

  • 1 tablespoon orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange juice and zest.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the chopped cranberries.
  8. Divide the batter evenly among the prepared pans and smooth the tops.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  11. For the Citrus Buttercream, beat together 1 cup of softened butter, 4 cups of powdered sugar, 2 tablespoons of orange juice, and 1 teaspoon of orange zest until smooth and creamy.
  12. Once the cakes are cool, frost the top of one layer, add the second layer, and frost again. Repeat with the third layer and frost the sides of the cake.
  13. Decorate with additional cranberries and orange slices if desired.
