Instructions
- Wash the spinach thoroughly and remove any tough stems.
- In a large pot, melt the butter over medium heat.
- Add the flour and whisk for about 1 minute to create a roux.
- Slowly pour in the heavy cream while whisking continuously until the mixture thickens.
- Add the grated Parmesan cheese, nutmeg, salt, and pepper, stirring until the cheese is melted.
- Add the spinach to the cream mixture and cook until wilted, about 3-5 minutes.
- Serve warm as a side dish.
