Instructions
- Prep the spinach: If using fresh spinach, wash thoroughly and chop coarsely. For frozen, thaw and drain well, squeezing out any excess liquid.
- Melt the butter: In a large skillet, melt the butter over medium heat, allowing it to foam until fragrant but not browned.
- Create the roux: Sprinkle in the flour, stirring to combine. Cook for about 1 minute, just until it turns lightly golden.
- Add the cream: Gradually pour in the heavy cream while whisking continuously until the mixture thickens, about 2–3 minutes.
- Stir in the grated Parmesan cheese, garlic powder, salt, pepper, and nutmeg (if using), coaxing everything to meld together into a luscious sauce.
- Fold in the spinach until well coated in the creamy goodness.
- Heat through: Cook for an additional 2-3 minutes on low heat until everything is heated and combined beautifully.
- Serve warm: Transfer to a serving dish and enjoy immediately.
