Description

Creamed spinach is a creamy, rich side dish packed with flavors that transforms humble spinach into a sumptuous indulgence.


Ingredients

  • 1 pound fresh spinach (or 10 ounces frozen spinach)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)

Instructions

  1. Prep the spinach: If using fresh spinach, wash thoroughly and chop coarsely. For frozen, thaw and drain well, squeezing out any excess liquid.
  2. Melt the butter: In a large skillet, melt the butter over medium heat, allowing it to foam until fragrant but not browned.
  3. Create the roux: Sprinkle in the flour, stirring to combine. Cook for about 1 minute, just until it turns lightly golden.
  4. Add the cream: Gradually pour in the heavy cream while whisking continuously until the mixture thickens, about 2–3 minutes.
  5. Stir in the grated Parmesan cheese, garlic powder, salt, pepper, and nutmeg (if using), coaxing everything to meld together into a luscious sauce.
  6. Fold in the spinach until well coated in the creamy goodness.
  7. Heat through: Cook for an additional 2-3 minutes on low heat until everything is heated and combined beautifully.
  8. Serve warm: Transfer to a serving dish and enjoy immediately.

Notes

For an even richer flavor, add crispy bacon bits or sautéed onions. Make-ahead: Prepare the sauce a day in advance, just reheat gently and add spinach before serving.
