- 1 lb chicken breast, diced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and season with salt, pepper, and Cajun seasoning. Cook until browned.
- Add onion, bell pepper, and garlic; sauté until softened.
- Stir in rice and chicken broth; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Stir in heavy cream and cook for an additional 5 minutes.
- Serve hot and enjoy!

- For extra spice, add more Cajun seasoning.
