Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the chopped carrots and apples, stirring for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer for about 20 minutes, or until the carrots are tender.
