Ingredients

- 1 lb chicken breast, diced
- 1 cup wild rice
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Add the onion, carrots, and celery, and sauté until softened.
- Stir in the wild rice, chicken broth, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the rice is tender.
- Stir in the heavy cream and heat through before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Feel free to add your favorite vegetables.
- This soup can be stored in the refrigerator for up to 3 days.
