- 1 lb chicken breast, cut into bite-sized pieces
- 1 can (13.5 oz) coconut milk
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup spinach, chopped
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and grated ginger, cooking for another minute.
- Add chicken pieces and cook until browned on all sides.
- Sprinkle curry powder, salt, and black pepper over the chicken.
- Pour in the coconut milk and bring to a simmer.
- Reduce heat and let it cook for about 15 minutes until chicken is cooked through.
- Add chopped spinach and lime juice, stirring until spinach wilts.
- Serve hot, garnished with fresh cilantro.
