- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
- Sear the chicken for about 5-7 minutes on each side until golden brown.
- Set the chicken aside on a plate.
- Sauté the minced garlic in the same skillet for 1-2 minutes until fragrant.
- Add the diced potatoes and cook for about 5 minutes, stirring occasionally.
- Create the creamy sauce by pouring in the heavy cream and adding the shredded cheese. Stir until melted and smooth.
- Return the seared chicken to the skillet, coating it in the sauce.
- Bake in the preheated oven for 25-30 minutes until the chicken reaches 165°F and potatoes are tender.
- Garnish with fresh parsley before serving.
