Ingredients

  • 4 cups potatoes, diced
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
  3. Sear the chicken for about 5-7 minutes on each side until golden brown.
  4. Set the chicken aside on a plate.
  5. Sauté the minced garlic in the same skillet for 1-2 minutes until fragrant.
  6. Add the diced potatoes and cook for about 5 minutes, stirring occasionally.
  7. Create the creamy sauce by pouring in the heavy cream and adding the shredded cheese. Stir until melted and smooth.
  8. Return the seared chicken to the skillet, coating it in the sauce.
  9. Bake in the preheated oven for 25-30 minutes until the chicken reaches 165°F and potatoes are tender.
  10. Garnish with fresh parsley before serving.
