Ingredients

- 4 large beets (red, orange, or yellow)
- 2 tbsp olive oil
- Salt and pepper (to taste)
- 6 large garlic cloves
- 1 small bundle of fresh dill (chopped)
- 1/3 cup mayonnaise
- 1 baguette
- 1/3 cup crumbled goat cheese (for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Trim the tops and tails off the beets, rinse them thoroughly, and wrap each beet individually in aluminum foil with olive oil and seasoning.
- Place them on a baking sheet and roast for 45-60 minutes until fork-tender.
- Cool the beets slightly, then peel off the skin.
- Drizzle garlic cloves with olive oil and roast for about 20-25 minutes until soft.
- Blend the peeled beets, roasted garlic, dill, and mayonnaise in a food processor until smooth but slightly chunky; season to taste.
- Slice the baguette into ½-inch thick slices, brush with olive oil, and toast at 375°F (190°C) for about 10 minutes until golden.
- Spread the beet mixture generously on each toasted crostini.
- Top each with crumbled goat cheese and sprigs of fresh dill.
Notes
Make-ahead tips: Prepare the beet spread a day in advance and store it in the fridge. Use an air fryer for faster beet roasting.
