Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 1 cup heavy cream
  • 2 tablespoons fresh herbs (thyme and rosemary)
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and chopped
  • 1/2 cup milk
  • 2 tablespoons butter
  • 4 carrots, sliced
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, and herbs.
  3. Brown the chicken thighs in a skillet over medium heat on both sides.
  4. Bake the browned chicken in the oven for 25-30 minutes until cooked through.
  5. Boil peeled and chopped potatoes in salted water until tender, then mash with milk and butter.
  6. Sauté sliced carrots in a pan with a splash of water until tender, then add honey to glaze.
  7. Plate the chicken with mashed potatoes and glazed carrots, then serve.
