Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons capers
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Season the salmon fillets with salt and pepper, then add them to the skillet, cooking for about 4-5 minutes on each side until golden brown and cooked through.
  3. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth, lemon juice, and lemon zest, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the heavy cream and capers, and let the sauce simmer for a few minutes until slightly thickened.
  7. Return the salmon to the skillet, spooning the sauce over the top, and cook for an additional 2 minutes.
  8. Garnish with fresh parsley before serving.
