Description

Ingredients

  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Begin by heating olive oil in your skillet over medium heat.
  2. Season chicken breasts generously with salt and pepper before placing them in the skillet.
  3. Sear each side until beautifully golden and cooked through, about 6-7 minutes per side.
  4. Remove the chicken and set it aside to rest.
  5. Add your chopped onions and minced garlic to the skillet and sauté until the onions become translucent, about 3-4 minutes.
  6. Introduce the sliced mushrooms and allow them to brown, about 5 minutes.
  7. Pour in the chicken broth and bring to a gentle simmer.
  8. Stir in the heavy cream and let the sauce thicken for approximately 5 minutes.
  9. Return the seared chicken to the skillet, nestling it into the sauce.
  10. Serve over mashed potatoes, garnishing with fresh parsley.
