Instructions
- Begin by heating olive oil in your skillet over medium heat.

- Remove the chicken and set it aside to rest.
- Add your chopped onions and minced garlic to the skillet and sauté until the onions become translucent, about 3-4 minutes.
- Introduce the sliced mushrooms and allow them to brown, about 5 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in the heavy cream and let the sauce thicken for approximately 5 minutes.
- Return the seared chicken to the skillet, nestling it into the sauce.
- Serve over mashed potatoes, garnishing with fresh parsley.
