- 2 fillets of salmon
- 8 oz fettuccine or linguine
- 2 cups fresh spinach
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and drizzle with olive oil.
- Sear the salmon: Heat olive oil in a non-stick skillet over medium-high heat. Season the salmon with salt and pepper. Cook skin-side down for 4-5 minutes, then flip and cook for another 4-5 minutes until done. Remove and flake.
- Sauté garlic: In the same skillet, lower the heat and add minced garlic. Sauté for about a minute until fragrant.
- Prepare the cream sauce: Pour in heavy cream, stir, and let simmer for 2-3 minutes to thicken slightly.
- Add spinach: Fold in fresh spinach and allow it to wilt for about a minute.
- Incorporate the salmon: Gently fold in the flaked salmon.
- Combine with pasta: Toss cooked pasta into the skillet until well coated in the creamy sauce.
- Serve and enjoy: Dish onto plates and garnish with grated Parmesan if desired.
