- 200g pasta (e.g., fettuccine or linguine)
- 200g salmon fillet
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, retaining a bit of the pasta water.
- Heat the olive oil in a large skillet over medium heat. Add the salmon and cook for about 3-4 minutes per side until it’s opaque and flakes easily. Remove the salmon and let it rest before flaking it into large pieces.
- Add minced garlic to the same skillet and sauté for about 30 seconds.
- Pour in the heavy cream and bring to a gentle simmer. Add fresh spinach and cooked pasta, stirring to combine.
- Add the flaked salmon back, season with salt and pepper, and toss gently until heated through.
- Serve hot, garnished with grated Parmesan cheese.
Notes
For a lighter option, swap the salmon for chicken or a plant-based alternative. Store leftovers in the fridge for up to 3 days.
