Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. Heat the olive oil: In a large skillet over medium heat, drizzle in the olive oil. Once hot, add the minced garlic. Sauté for about one minute until it releases its fragrant aroma.
  3. Sauté the spinach: Toss in the fresh spinach, stirring continuously. Cook until the spinach wilts down—this should take around 2-3 minutes.
  4. Create the creamy sauce: Pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese until it completely melts.
  5. Season to perfection: Add salt and pepper to taste. If the sauce appears too thick, sprinkle in a bit of reserved pasta water.
  6. Combine and serve: Fold in the drained pasta, gently tossing until every strand is coated in the creamy sauce.
  7. Optional protein topping: If desired, serve topped with sliced chicken or steak.

Notes

You can prepare the sauce in advance. Reheat gently before adding fresh pasta. For a vegan option, use coconut cream and nutritional yeast.
