- 2 chicken breasts, diced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through.
- Add minced garlic and sun-dried tomatoes; sauté for 2-3 minutes.
- Pour in the chicken broth and heavy cream; stir to combine.
- Bring to a simmer and let it thicken slightly.
- Stir in the Parmesan cheese until melted and smooth.
- Add the cooked pasta to the skillet; toss to coat.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional Parmesan if desired.
