- 1 cup Ripe Tomatoes (Diced)
- 1 cup Heavy Cream
- 4 cloves Fresh Garlic (Minced)
- 2 tbsp Extra Virgin Olive Oil
- 1/4 cup Fresh Basil (Chopped)
- Salt and Pepper to Taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a rolling boil. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Once done, drain and set aside but reserve a cup of pasta water.
- Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until golden brown and fragrant, about 1-2 minutes.
- Add Tomatoes: Toss in the diced tomatoes along with a pinch of salt and pepper. Let them simmer for about 5 minutes.
- Incorporate Cream: Lower the heat and gradually stir in the heavy cream. Let this simmer gently for another 3-5 minutes until the sauce thickens.
- Combine Pasta and Sauce: Toss the cooked pasta into the skillet, using tongs to coat each strand with the creamy sauce. If needed, add a bit of reserved pasta water.
- Serve: Plate the pasta, garnishing with chopped fresh basil and grated Parmesan cheese if desired.
Notes
Make the sauce ahead of time and store in the fridge for up to three days. You can customize by adding chicken, shrimp, or vegetables.
