Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add sun-dried tomatoes and cook for another 2 minutes.
  7. Pour in the chicken broth and bring to a simmer.
  8. Stir in the heavy cream and Parmesan cheese, mixing until smooth.
  9. Add the spinach and cook until wilted.
  10. Return the chicken to the skillet and coat it with the creamy sauce.
  11. Serve hot in bowls, garnished with additional Parmesan if desired.
