Description

This crispy air fryer Parmesan cod features tender, flaky fish beneath a crunchy panko and Parmesan crust, enhanced with garlic and herbs for a delightfully flavorful meal.

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese

  • Salt and black pepper to taste
  • 1 tbsp olive oil or mayonnaise
  • Fresh parsley, chopped (optional)
  • Lemon wedges for serving
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice

Instructions

  1. Prep the cod: Start by patting the cod fillets dry using paper towels.
  2. Season generously: Sprinkle salt and black pepper on both sides of the cod fillets.
  3. Create the breading: In a shallow bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, and paprika.
  4. Build the crust: Lightly brush each seasoned fillet with olive oil or mayonnaise, then press firmly into the panko mixture.
