- 2 cups mashed potatoes
- 1 cup shredded cheese
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1 egg, beaten
- Salt and pepper to taste
- Oil for frying
Instructions
- Combine the mashed potatoes and shredded cheese with chopped green onions. Add the beaten egg, salt, and pepper. Mix well.
- Shape the mixture into small bites or patties.
- Dredge each bite in breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry the potato bites in batches for 3-4 minutes on each side until golden brown.
- Remove from the pan and drain on paper towels.
- Serve warm.
Notes
Freezing the shaped bites is an option. Bake at 400°F (200°C) for a healthier alternative.
