- 2 cups cooked rice
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the mayonnaise, sriracha sauce, soy sauce, garlic powder, salt, and pepper to create the spicy mayo.
- Coat the chicken pieces in flour, dip them in beaten eggs, and then coat with breadcrumbs.
- Place the coated chicken on a baking sheet and bake for 20-25 minutes or until golden brown and crispy.
- While the chicken is baking, prepare the rice according to package instructions.
- Once the chicken is done, assemble the bowl by placing rice at the bottom, topping it with crispy chicken, and drizzling with spicy mayo.
- Garnish with chopped green onions and serve immediately.
Notes
- For extra crunch, you can fry the chicken instead of baking.
- Adjust the spiciness of the mayo by adding more or less sriracha.
- This dish can be served with a side of vegetables for added nutrition.
