Description

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the mayonnaise, sriracha sauce, soy sauce, garlic powder, salt, and pepper to create the spicy mayo.
  3. Coat the chicken pieces in flour, dip them in beaten eggs, and then coat with breadcrumbs.
  4. Place the coated chicken on a baking sheet and bake for 20-25 minutes or until golden brown and crispy.
  5. While the chicken is baking, prepare the rice according to package instructions.
  6. Once the chicken is done, assemble the bowl by placing rice at the bottom, topping it with crispy chicken, and drizzling with spicy mayo.
  7. Garnish with chopped green onions and serve immediately.

Notes

  • For extra crunch, you can fry the chicken instead of baking.
  • Adjust the spiciness of the mayo by adding more or less sriracha.
