Ingredients

  • 1 whole duck (about 56 pounds)
  • 2 oranges, juiced and zested
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the duck under cold water and pat dry with paper towels.
  3. Season the duck inside and out with salt and pepper.
  4. In a bowl, mix together the orange juice, honey, soy sauce, rice vinegar, ginger, and garlic.
  5. Place the duck on a roasting rack in a roasting pan and brush the glaze all over the duck.
  6. Roast the duck in the preheated oven for about 1.5 to 2 hours, basting with the glaze every 30 minutes.
  7. Increase the oven temperature to 425°F (220°C) for the last 15-20 minutes to crisp the skin.
  8. Remove the duck from the oven and let it rest for 10-15 minutes before carving.
  9. Serve garnished with fresh herbs and additional orange slices if desired.
