Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt to taste
- Black pepper to taste
- 1/2 cup breadcrumbs
- Oil for frying
Instructions
- Boil the sweet potatoes until tender, then mash them in a bowl.
- In a separate pot, cook the red lentils in water until soft, then drain.
- Add the cooked lentils, onion, garlic, cumin, coriander, salt, and pepper to the mashed sweet potatoes and mix well.
- Form the mixture into patties and coat them with breadcrumbs.
- Heat oil in a frying pan over medium heat and fry the patties until golden brown on both sides.
- Remove from the pan and place on paper towels to drain excess oil.
- Serve hot with your favorite dipping sauce.

- For a vegan option, ensure the breadcrumbs are vegan-friendly.
- These patties can be baked instead of fried for a healthier version.
