Description

Delicious and crispy patties made from sweet potatoes and red lentils, perfect for a healthy snack or meal.


Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup breadcrumbs
  • Oil for frying

Instructions

  1. Boil the sweet potatoes until tender, then mash them in a bowl.
  2. In a separate pot, cook the red lentils in water until soft, then drain.
  3. Add the cooked lentils, onion, garlic, cumin, coriander, salt, and pepper to the mashed sweet potatoes and mix well.
  4. Form the mixture into patties and coat them with breadcrumbs.
  5. Heat oil in a frying pan over medium heat and fry the patties until golden brown on both sides.
  6. Remove from the pan and place on paper towels to drain excess oil.
  7. Serve hot with your favorite dipping sauce.
