Ingredients

  • 2 cups red cabbage, thinly sliced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons soy sauce (low sodium)
  • 1½ tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh grated garlic
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon sesame seeds

Instructions

  1. Whisk the dressing: In a small bowl, combine sesame oil, soy sauce, rice vinegar, honey, grated garlic, and grated ginger. Add Dijon mustard if using, and whisk until smooth.
  2. Combine the veggies: In a large bowl, toss together the green cabbage, red cabbage, shredded carrots, and sliced green onions.
  3. Dress the slaw: Pour the dressing over the cabbage mixture and toss gently to coat.
  4. Let it marinate: Allow the slaw to sit for 10-15 minutes.
