Description

A refreshing salad with cool cucumbers and sweet strawberries, perfect for sunny days.


Ingredients

  • 2 Cucumbers, thinly sliced
  • 1 lb Strawberries, quartered
  • 1/4 cup Fresh Herbs (mint or basil), chopped
  • 1/4 cup Olive Oil
  • 2 tbsp Balsamic or Apple Cider Vinegar
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup Feta or Goat Cheese (optional)
  • 1/4 cup Chopped Nuts (almonds or walnuts, optional)

Instructions

  1. Wash and slice the cucumbers and strawberries.
  2. Combine the cucumbers, strawberries, and fresh herbs in a large mixing bowl.
  3. Prepare the vinaigrette by whisking together olive oil, vinegar, salt, and pepper.
  4. Drizzle the vinaigrette over the salad and toss gently.
  5. Finish with cheese and nuts if desired, and serve immediately.
