Description

A refreshing summer salad combining crisp cucumbers and sweet strawberries, elevated with creamy cheese and fresh herbs.


Ingredients

Scale
  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber (or 3 Persian cucumbers), thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 2 tbsp chopped fresh mint or basil
  • 2 tbsp slivered almonds, sunflower seeds, or walnuts (toasted, optional)
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Wash and dry the strawberries and cucumbers. Hull the strawberries and slice them.
  2. In a small bowl or jar, combine the lemon juice or balsamic vinegar with honey or maple syrup. Pour in the olive oil and season with salt and pepper. Whisk or shake until blended.
  3. In a large mixing bowl, combine the cucumber, strawberries, herbs, and cheese.
  4. Drizzle half of the dressing over the salad and toss gently.
  5. Transfer to a serving platter, garnish with toasted nuts/seeds, and drizzle with remaining dressing. Serve immediately.

Notes

Enjoy immediately for the freshest flavor. Dress just before serving to maintain crunch.
