Instructions
- Preheat your oven to 325°F (165°C).
- Combine the chocolate cookie crumbs, 1/4 cup sugar, and melted butter in a mixing bowl.
- Press the mixture firmly into the bottom of a springform pan to form the crust.
- Beat the softened cream cheese in a separate bowl until creamy and smooth.
- Add 1 cup sugar and vanilla extract, mixing until fully incorporated.
- Add eggs one at a time, mixing well after each addition.
- Pour in the melted dark chocolate and stir until fully blended.
- Fold in the fresh raspberries gently.
- Pour the cheesecake filling over the crust and smooth the top.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Cool at room temperature, then refrigerate for at least 4 hours before serving.
