Description

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup dark chocolate chips, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Combine the chocolate cookie crumbs, 1/4 cup sugar, and melted butter in a mixing bowl.
  3. Press the mixture firmly into the bottom of a springform pan to form the crust.
  4. Beat the softened cream cheese in a separate bowl until creamy and smooth.
  5. Add 1 cup sugar and vanilla extract, mixing until fully incorporated.
  6. Add eggs one at a time, mixing well after each addition.
  7. Pour in the melted dark chocolate and stir until fully blended.
  8. Fold in the fresh raspberries gently.
  9. Pour the cheesecake filling over the crust and smooth the top.
  10. Bake for 55-60 minutes or until the center is set but slightly jiggly.
  11. Cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

Store the cheesecake in the refrigerator for up to five days. It does not freeze well, so consume within a month if frozen.
