Description

Indulge in a luxurious dessert where rich dark chocolate meets tart raspberries, layered in a creamy mousse dome.


Ingredients

Scale
  • 200g Dark Chocolate (60% cocoa or semi-sweet)
  • 300ml Heavy Cream
  • 3 Large Eggs
  • 100g Sugar
  • 1 tsp Vanilla Extract
  • 200g Fresh Raspberries
  • 50g Raspberry Puree
  • 1 tsp Gelatin
  • Mirror Glaze (optional)

Instructions

  1. Melt the chocolate in a heatproof bowl over simmering water until smooth and let cool slightly.
  2. Beat the egg yolks, sugar, and vanilla together until pale and creamy, about 3-4 minutes.
  3. Whip the heavy cream until soft peaks form.
  4. Combine the whipped cream with the melted chocolate gently.
  5. Whip the egg whites in a clean bowl until stiff peaks form and fold into the chocolate mixture.
  6. Prepare the raspberry filling by mixing raspberries, raspberry puree, and dissolved gelatin.
  7. Layer the chocolate mousse and raspberry filling in silicone molds.
  8. Chill in the refrigerator for several hours or overnight.
  9. Unmold and glaze with mirror glaze if desired before serving.

Notes

Make these desserts a day in advance for the best flavor. Serve with extra fresh raspberries and a drizzle of raspberry sauce.
