- 200g Dark Chocolate (60% cocoa or semi-sweet)
- 300ml Heavy Cream
- 3 Large Eggs
- 100g Sugar
- 1 tsp Vanilla Extract
- 200g Fresh Raspberries
- 50g Raspberry Puree
- 1 tsp Gelatin
- Mirror Glaze (optional)
Instructions
- Melt the chocolate in a heatproof bowl over simmering water until smooth and let cool slightly.
- Beat the egg yolks, sugar, and vanilla together until pale and creamy, about 3-4 minutes.
- Whip the heavy cream until soft peaks form.
- Combine the whipped cream with the melted chocolate gently.
- Whip the egg whites in a clean bowl until stiff peaks form and fold into the chocolate mixture.
- Prepare the raspberry filling by mixing raspberries, raspberry puree, and dissolved gelatin.
- Layer the chocolate mousse and raspberry filling in silicone molds.
- Chill in the refrigerator for several hours or overnight.
- Unmold and glaze with mirror glaze if desired before serving.
