Description

Indulge in these luscious pie bars featuring rich dark chocolate and tart raspberries, perfect for gatherings or a sweet treat at home.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/2 cup butter, melted
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a mixing bowl, whisk together the flour, cocoa powder, powdered sugar, melted butter, and salt until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes, until set but not dry.
  4. In another bowl, combine raspberries, sugar, cornstarch, and vanilla extract to prepare the filling.
  5. Once the crust is baked, distribute the raspberry mixture evenly over it and bake for another 20-25 minutes until the filling bubbles.
  6. Melt the dark chocolate chips and drizzle over the baked raspberry layer.
  7. Cool completely before cutting into squares and serving.

Notes

For a gluten-free version, substitute with gluten-free flour. You can also use frozen raspberries, adjusting cornstarch if necessary.
