Ingredients

  • 1 teaspoon ground cinnamon

  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the oil and eggs until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the grated carrots, crushed pineapple, and walnuts if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely in the pan.
  9. For the frosting, beat together the cream cheese and butter until smooth.
  10. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  11. Spread the cream cheese frosting over the cooled carrot cake bars.
  12. Cut into squares and serve.
