Description

A rich and velvety cheesecake made with dark chocolate and fresh raspberries, perfect for any celebration or a cozy night in.


Ingredients

  • 1 cup crushed chocolate cookies
  • 5 tablespoons melted butter
  • 16 ounces cream cheese
  • 1 cup granulated sugar
  • 8 ounces melted dark chocolate
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1 cup whipped cream
  • ½ cup chocolate drizzle

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Create the crust by mixing the crushed chocolate cookies with melted butter and pressing into a springform pan.
  3. Melt the dark chocolate gently over simmering water or in the microwave.
  4. Mix the cream cheese until smooth, then gradually add the sugar until fluffy.
  5. Add the eggs one at a time, mixing in the vanilla and melted chocolate gently.
  6. Fold in the fresh raspberries carefully.
  7. Bake for 55-60 minutes or until the center is slightly jiggly.
  8. Cool in the oven for an hour, then refrigerate for at least four hours.
  9. Serve topped with whipped cream and a drizzle of chocolate.

Notes

Allow the cheesecake to rest overnight for better flavor. Be cautious to avoid overmixing to prevent cracks.
