- 5 tablespoons melted butter
- 16 ounces cream cheese
- 1 cup granulated sugar
- 8 ounces melted dark chocolate
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
- 1 cup whipped cream
- ½ cup chocolate drizzle
Instructions
- Preheat the oven to 325°F (163°C).
- Create the crust by mixing the crushed chocolate cookies with melted butter and pressing into a springform pan.
- Melt the dark chocolate gently over simmering water or in the microwave.
- Mix the cream cheese until smooth, then gradually add the sugar until fluffy.
- Add the eggs one at a time, mixing in the vanilla and melted chocolate gently.
- Fold in the fresh raspberries carefully.
- Bake for 55-60 minutes or until the center is slightly jiggly.
- Cool in the oven for an hour, then refrigerate for at least four hours.
- Serve topped with whipped cream and a drizzle of chocolate.
